When you get a day of homeschooling disasters then you might as well add to the mayhem. Baking mayhem.
First up a simple sponge cake. It rose about as much as my bank account balance. Not at all. But a bit of homemade whipped cream came to the rescue. At least it tasted good.
Then it was a flour free mini chocolate cake. Ok it started off as a soufflé. In temperatures over 170C it did rise beautifully. Anything lower – who let the air out….. Sadly even whipped cream couldn’t really save it. At least it tasted almost ok.

I ordered Panko breadcrumbs. I’m planning to try a crustless zucchini quiche and maybe crunchy zucchini sticks or rounds… dunno yet.

Grrrrr… may Amazon Fresh delivery had everything except the breadcrumbs, the 1 item I need!!
Buuut… I got 3 containers of pistachios that I didn’t order, worth about $17! They told me to keep them.

The pistachios are great. I don’t know why but the Universe also screwed up my replacement order of breadcrumbs!! I guess I’m not supposed to make the recipe that calls for them!

Yeaaahhhh… the “roto rooter” effect hit me about 30min after I ate them. Thank gawd they’re in 3 pkgs or I would have continued scarfing them I lurve pistachios!!

WHAT WEIRD JUJU DO I HAVE??? I ordered a purple room fan, present for neighborkid, for pickup and added a couple extra items. 6 hrs later I got a notice that the item is put of stock and was cancelled (though the addons weren’t). But 6 hrs later, the website says they’re still in stock at that location. I’m losing my mind!!!

No it’s the same here. I ordered something. 10 hours later email to say out of stock. Looked and it was in stock, so reordered immediately.

I reordered from a different location. The purple on is super cute but if that also gets cancelled then I’ll pick up a white one at nearby HomeDepot which has 187 in stock. But they don’t have breadcrumbs!
Unicorn and gemstone stickers, so she can customize the fan, are due from Amazon later today. Wanna place any bets on them arriving!?

Haha! I like that comparing the rising to your bank account. I could have used that line this week for my Zucchini bread, which was more zucchini crumbles, but hey it was good and your sponge cake looks good too! How it tastes is what matters, right! 🙂

Can I bake well? Well… Sometimes. Other times not so much. Baking is so much science. Never was very good at science. Gluten free baking isn’t fair. It’s much more of a mystery than regular baking.

I love a bit of baking and those looked light and fluffy. May I ask, do use plain flour and baking powder or self-raising. I have a never fail sponge cake in the recipes on my website too. If you’d like to try a different one.
